Theoretical training offered by Countryside College of Southwest Finland for apprenticeship students:

Small breweries and distilleries

The objective of this training is to provide the students with the know-how for working in a brewery restaurant in a role of being in charge of the brewing process, or for starting a small brewery business of their own. The students gain the necessary know-how for developing and manufacturing commercial beers, ciders, fruit alcohol beverages and liqueurs. The training gives information on regulations of the branch, business-skills, machinery and production.

The training programme for small breweries and distilleries consists of 20 study weeks. The teaching is divided into expert lectures and practical training. In addition to facilities for theoretical teaching, the institute has its own small brewery and distillery equipment, maintenance and manufacturing facilities for equipment and a training restaurant. Teaching is given as multi-format education. During their studies, the students shall design their own production recipes, make cost comparisons with different production alternatives and draft an operations strategy for starting an independent brewery restaurant or a small brewery. The target audience for this training is agricultural entrepreneurs who have an interest in developing their own agricultural business and those working within food or brewery industries.
